Pickled Plums


Umeboshi

INGREDIENTS:

  • 1kg plums
  • 200g vinegar
  • 300g sugar
  • 4-5 cloves
  • pinch of cinnamon
  • 600ml water

METHOD:

Prick the plums with a toothpick in several places and place it a boiling water for 1 minute. Take it out, dry and place in jars.

Prepare trapping by boiling the water with the vinegar (50/50), sugar, cinnamon and cloves.  Pour over the plums, close the jars and pasteurise in the oven for 20 minutes or by boiling the jars on a low heat ( place a cloth on the bottom of the saucepan).
