Pancakes With Curd Cheese And Cherries

INGREDIENTS:

Base:

  • 3/4 glasses of milk
  • 1 egg
  • 1 glass of flour
  • 1 tsp vanilla sugar
  • 3/4 glass sparkling water
  • 2 – 3 tbsp olive oil
  • pinch of salt

Filling:

  • 250g curd cheese
  • 2 tbsp natural yoghurt
  • 1 tbsp sugar
  • 8 tbsp cherries (from the compote)
  • cherry flavour

METHOD:

Mix the egg with milk, flour, vanilla sugar and pinch salt. To the mixture add in the sparkling water, mix well and leave aside for 30 minutes.

Preheat the frying pan with the olive oil and make the pancakes.

Crush the curd cheese with a fork, then mix it with natural yoghurt, sugar, few drops of the cherry flavour and cherries. Place the filling in the middle of the pancake, form a pouch and tie with a thread.

TIP: if using frozen or fresh cherries then more sugar is needed. You can pour over cream or natural yoghurt and sugar to serve.
