Pancake Tower

INGREDIENTS:

  • 200 grams flour
  • 2 tsp baking powder
  • 2 eggs
  • 50 grams sugar
  • 30 grams butter, melted
  • 140 ml carbonated water
  • vanilla oil
  • whipped cream
  • fresh fruits
  • mint
  • chocolate sauce

METHOD:

  1. Combine egg and sugar in a bowl and mix well. Add in melted butter, carbonated water and vanilla oil and mix until ingredients are combined.
  2. Sift in flour and baking powder. Mix until just combined. Do not overmix batter. Some lumps are fine.
  3. Pour a little oil onto a frying pan and heat on medium. Pour batter onto frying pan and turn heat to low. Once bubbles start to form on the surface, flip it over and cook for an additional 3 minutes or until done. Repeat with the remaining pancake batter.
  4. Place a pancake onto a platter and top with whipped cream and fruits. Repeat with the rest of the pancakes. Top off with more whipped cream, fruits, a sprig of mint and chocolate sauce if desired.
