INGREDIENTS:
- 1 slice wholemeal bread
- 85g turkey breast
- 60g spinach
- 60g sundried tomatoes
- 30g feta
- 60g cucumber
- 4 black olives
- 1 tbsp chopped spring onion
- 1 tsp fresh mint
- 1/2 tsp lemon juice
METHOD:
Top 1 slice wholemeal bread with 85g turkey breast, 60g spinach, 60g sundried tomatoes and 30g feta. Grill for 6 mins or until golden + serve with a salad of 60g cucumber, 4 black olives, 1 tbsp chopped spring onion, 1 tsp fresh mint and 1/2 tsp lemon juice. Enjoy!
