Roast Pumpkin & Pear Salad

INGREDIENTS:

  • 150g pumpkin
  • 75g Brussels sprouts
  • 2 tsp olive oil
  • 28g goat’s cheese
  • 2 tbsp pistachios
  • 1 sliced pear
  • 2 tbsp balsamic
  • 2 tsp mustard.

METHOD:

Roast 150g pumpkin + 75g Brussels sprouts in 2 tsp olive oil for 30 mins, then mix in 28g goat’s cheese, 2 tbsp pistachios, 1 sliced pear, 2 tbsp balsamic + 2 tsp mustard.
