Wild Rice, Cauliflower And Kale Salad

INGREDIENTS:

  • 40g cooked wild rice
  • 70g chopped kale,
  • 50g cauliflower florets,
  • 150g cherry tomatoes.
  • 2 tbsp sunflower seeds
  • 30g crumbled blue cheese
  • 2 tsp olive oil and 1½ tsp lemon juice.

METHOD:

Top 40g cooked wild rice with 70g chopped kale, 50g cauliflower florets, and 150g cherry tomatoes. Sprinkle with 2 tbsp sunflower seeds and 30g crumbled blue cheese then drizzle 2 tsp olive oil and 1½ tsp lemon juice.
