Aloo Tiki Burger

INGREDIENTS

  • For the patties:

  • 2 large potatoes, peeled and diced

  • ½ tsp ground cumin

  • ½ tsp ground red chili powder

  • ½ tsp coriander powder

  • ½ tsp amchoor powder (dried mango powder) or chaat masala powder

  • ¼ tsp dried mint

  • ½ cup fresh coriander, chopped

  • Salt to taste

  • 2 Tbsp cornstarch

  • 4 Tbsp canola/vegetable oil

  • For the coriander chutney:

  • 1 cup fresh coriander

  • 1 small green chili, chopped

  • ½ small white onion, chopped

  • Juice of ½ a lemon

  • Salt to taste

  • For assembly:

  • 6 burger buns

  • 2 Tbsp melted butter

  • Shredded lettuce

  • Tomatoes, thinly sliced

  • Sweet onion (Vidalia), thinly sliced

METHOD:

  1. Boil potatoes until fork tender. Gently mash, adding patty spices, fresh coriander, salt and cornstarch. Mix until incorporated.

  2. Form 6 medium-sized patties similar to the size of the burger bun.

  3. Heat oil in a large frying pan over medium-high heat. When hot, add patties and fry for 3-4 minutes on each side until golden brown and crisp. Drain on a paper towel.

  4. Combine all ingredients for chutney in a blender, and blitz until pureed.

  5. Brush melted butter onto burger buns; toast them in a hot pan. Add lettuce to bottom bun, followed by Aloo Tikki Patty and sliced tomatoes and onions. Dress with coriander chutney before adding top bun.
