Low Calorie Turkey Burger

INGREDIENTS

FOR THE BURGER

  • 400g turkey breast mince
  • 1 egg, whisked
  • 2 spring onions, finely sliced
  • 1 red chilli, finely chopped
  • 1 garlic clove, minced
  • 1 small handful coriander, finely chopped
  • 1 courgette, grated
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • Sea salt
  • Black pepper
  • 2 granary buns

FOR THE SALSA

  • 1 large avocado
  • ½ red onion, finely chopped
  • ½ red chilli, finely chopped
  • 1 small can sweetcorn (reduced sugar and salt)
  • 1 lime, juiced
  • 1 small handful coriander, finely chopped
  • 50g alfalfa sprouts

FOR THE WEDGES

  • 2 large sweet potatoes
  • 1 tbsp olive oil

METHOD

1. Preheat the over to 180C.

2. Add the salsa ingredients to a bowl and combine with a fork (keep it slightly chunky)

3. Cut the sweet potatoes into wedges and place on a baking sheet with a little oil and salt.

4. Put the wedges in the oven and bake for 20 minutes until tender.

5. Whilst the wedges are cooking, add the turkey mince to a large bowl and break up.

6. Add the egg, spring onions, chilli, garlic, herbs, courgette, spices, salt and pepper to the bowl and combine well.

7. Form the mixture into 4 burger patties.

8. Pour the oil into a large non-stick frying pan and heat. Add the burgers and shallow fry for a few minutes each side until browned.

9. Remove the burgers from the pan and then transfer to a plate topped with kitchen towel to pat the patties dry.

10. Place the burgers on a large roasting tin and cook in the oven for 10 minutes until cooked through.

11. Construct the burgers by placing the burger on one half of the granary bun. Top with avocado salsa and alfalfa sprouts.

12. Serve with sweet potato wedges.
