Kokosanki – Coconut cake

INGREDIENTS:

  • 3 eggs
  • 1 glass of sugar
  • 1 pack of vanilla sugar
  • 1 glass of caster sugar
  • 2 tbsp of potatoes flour
  • 350g grated coconut

METHOD:

Whipped the egg whites, then add in the vanilla and caste sugar. Carry on mixing. Then add in flour and keep mixing for another 3-5 minutes. Add in the grated coconut. Mix well. Place the cake mixture in the cake tin (make sure you put the baking paper at the bottom). Place in the oven and bake for about 15-25 minutes (until golden)
