Pepper Tortilla

INGREDIENTS:

  • 4 potatoes, peeled and thinly sliced
  • 2 red peppers
  • 8 eggs
  • 100g feta cheese
  • 6 tbsp oil
  • sea salt, pepper

METHOD:

Preheat the oven to 200C. Place the peppers in the over )cover with the aluminium foil) and bake it on each side, until the skin is brown. Once done, place it in the saucepan for few minutes, so it can cool down. Then peel to skin and empty the seeds from inside. Slice the peppers.

Place the potatoes on the frying pan  and fry for about 15 minutes, constantly mixing it.

In a bowl whisk the eggs, season with sea slat and pepper, add in the pepper slices and fried potatoes, mix well.

Pour over the mixture into the hot pan and fry for about 5-6 minutes on each side. Sprinkle with the cheese and fry for about 2-4 minutes.

Place it on the place, cut into triangles and decorate with the fresh herbs.

NOTE: You can replace the peppers with onion.
