Ricotta Creme



  • 500g strawberries
  • 2 tbsp peach or apricot liqueur
  • 2 egg whites
  • pinch of salt
  • 2 pack of vanilla sugar
  • 250g ricotta
  • 125ml sweet cream (whipped)
  • 50g amaretto biscuits (recipe in the separate post)
  • 30g chopped pistachios


Place aside few strawberries for the decorations. Slice the rest of strawberries and pour few drops of the liqueur.

Whisk the egg whites until stiff and add in the pinch of salt. While whisking slowly add in 1 pack of the vanilla sugar .

Place the ricotta cheese in a bowl and add in the egg whites mixture. Mix well until smooth. Then add in the whipped cream and again mix well.

Place the strawberries and amaretto biscuits and mix.

Place the mixture in the dessert glasses and put into the fridge for half an hour.

Serve with the chopped pistachios, strawberries and amaretti biscuits. You can also add in the crushed meringues.
