Banana Bread



  • 100g butter
  • 175g castor sugar
  • 2 large eggs beaten
  • 200g self raising flour
  • 200g ripe bananas
  • 85g yogurt
  • ½ tsp of baking powder
  • ½ tsp of nutmeg
  • 125g plump sultanas
  • 100g roasted walnuts or pecans
  • 50g poppy seeds


Cream the butter and the sugar together in a bowl until it is light and fluffy

Add the beaten eggs

Add a little of the flour at a time until it is all incorporated

Mash the bananas until smooth and stir into the mixture with the yogurt

Sift in the flour and the baking powder

Add the nutmeg, sultanas and the roasted nuts and poppy seeds and mix until smooth

Spoon the mixture into a lined loaf tin and bake at 170c for 45 minutes, however you need to check it by pressing the top of the cake, if it springs back its cooked if not it will need a little longer
