Red Wine and Garlic Steak Marinade



  • One 750-milliliter bottle red wine
  • 10 garlic cloves, smashed
  • ½ cup granulated sugar
  • ¼ cup kosher salt
  • 1 teaspoon whole coriander seeds, toasted
  • ½ teaspoon smoked paprika
  • ¼ teaspoon red pepper flakes
  • 2 thyme sprigs
  • 1 oregano sprig
  • 1 cinnamon stick
  • 1 star anise


In a medium saucepan, combine all the ingredients. Bring to a simmer over medium-high heat and cook until aromatic, 5 minutes. Remove from the heat and let cool completely before adding meat to marinate in a sealable bag for up to 24 hours.
