Chicken Curry Salad


INGREDIENTS

  • 2 cups cooked chicken
  • 4 Tbsp mayonnaise (or vegan mayo)
  • ½ tsp yellow curry powder
  • Juice of ½ a lemon
  • 1 green onion, sliced
  • ½-1 apple, finely diced (or can use grapes)
  • 1-2 celery stalks, finely diced
  • salt, to taste

METHOD:

  1. In a medium bowl, stir together, mayonnaise/vegannaise, curry powder, and lemon juice. Stir in chicken, green onion, apple, and celery. Stir to coat. If desired, add more mayonnaise, or lemon juice. Taste and add salt to your preference.
