Vanilla Protein Pancakes With Fresh Fruit


INGREDIENTS:

Pancake mix
• 1 egg
• 30g vanilla whey protein
• 1 tsp gluten-free baking powder
• 50g gluten-free flour
• 50ml almond milk
• 1 banana
Topping
• 2 tbsp quark
• 20g strawberry whey protein powder
• 5 raspberries

• Fresh fruit salad
• 2 tbs of chopped nuts

METHOD:

1. Blend together pancake mix ingredients, using a blender until smooth
2. Heat a non- stick pan and brush with coconut oil
3. Using a ladle, spoon the batter mix into the heated pan, cook until small bubbles appear on the surface, and flip to cook the other side
4. Whip together the raspberries, strawberry protein powder and quark
5. Pour mix over the pancakes and fresh fruit, top with the chopped nuts
